Great for plating and a vegan option for filling a fruit tart, mango coulis is a must-have item for the well-stocked kitchen. Those who avoid refined sugar can use light agave syrup instead of the sugar and water.

Ingredients

Mango chunks, fresh or frozen 1 cup (5

Method

  1. Combine the mango, water, and sugar in a heavy-bottomed saucepan. Cook the mixture over low to medium heat until the liquid lightly simmers.
  2. Transfer the coulis to a blender and add the lemon juice. Puree, taste, and add sugar as necessary.
  3. Refrigerate coulis between uses; it will keep for up to a week.
