Mint is a lovely addition to a fruit tart—it highlights and brings out the flavors. Sprinkle this over the fruit prior to baking. It is a flavor enhancement, though, not a substitute for a glaze.

Combine the honey, sugar, and water in a small saucepan. Bring the mixture to a simmer to dissolve the sugar. Add the mint leaves, cook for 1 minute, then turn off the heat and steep for 5 minutes. Pour the mixture through a fine-mesh strainer and discard the solids. Store the syrup in a squeeze bottle to use as necessary; it will keep in the fridge for up to 1 month.
