Method

Bring a large stockpot of water to a rolling boil. Add the potatoes and cook until they are thoroughly soft, about 1 hour. Meanwhile, prepare an ice bath.
When the potatoes are done, reserve ¼ cup of the cooking water from the pot, then drain and dunk the potatoes in t
