  • whole garlic cloves, unpeeled duck fat

Method

Place the whole garlic cloves into a small pan. Cover the garlic with duck fat and gently poach for about 15 minutes, or until soft. Pack into sterilized jars, add duck fat to cover and store in the refrigerator.
