  • 500 g (1 lb 2 oz) fine semolina flour

Method

Place the semolina flour into a mixing bowl. Add the egg yolks and egg, then mix for about 5 minutes until you have a smooth dough. Tip out onto a work surface and knead until perfectly smooth; do not over-work. Allow to rest for 1 hour before rolling out using a pasta machine and cutting as instructed in the recipe.
