In a large saucepan, bring some of the oil to a high heat. Add the prawn heads and cook, stirring regularly, until they have turned red. Add the rest of the ingredients, except for the oil, and sweat for 5-10 minutes. Add the olive oil and cover with a lid. Place the pan in a 180°C (350°F/Gas 4) oven and cook for 1 hour.
