Fig Marmalade

  • 8 ripe black figs
  • zest and juice of 1 lemon

Method

First make the fig marmalade. Roughly chop six of the figs and put in a pan with the lemon zest and juice, orange juice, white wine, sugar, peppercorns and juniper berries. Bring to the boil, then reduce the heat to medium-low and cook the marmalade, stirring occasionally, until it has a thick jam-like consistency.
