First make the lime dressing. Mix all the ingredients together and place them in an airtight container.
You will need a very sharp thin-bladed knife for this dish. Dice the tuna into 1½ cm (⅝ inch) cubes and scatter them around the plates. Slice the scallops in half then cut them into chunks about the same size as the tuna pieces. Arrange them evenly on the serving plat
