Tomato and Lemongrass Broth

Method

To make the broth, put all the ingredients except the coriander and spring onion into a saucepan and bring to the boil. Add the coriander and spring onion, reduce the heat and simmer gently for 20 minutes. Push through a conical strainer, bring back to the boil and allow to cool.
