These are fragrant, crisp little rice fritters. The spinach and bacon add depth of flavour. The garlic and thyme give high notes of herbal zing. These are a kind of pintxo snack, Northern Spanish in structure but swinging East in flavour. I love ground coriander, herbal and citrus. Those flavours, along with the fresh thyme, make these fried spheres feel light and fresh.
