Leftover rice need not be forever relegated to the lacklustre cold salad. It wakes in Nirvana when teamed with luxurious freshly butter-poached chicken and creamy spiced baked yogurt.
Add the rice to 700 ml/24 fl oz/3 cups boiling water, then simmer until the grains are soft, about 10 minutes.
