This is a Spanish/Latin American classic and, by Jove, they know how to wield smoked paprika and chicken better than anyone in the world!


  • 1 whole chicken, cut into 8 pieces
  • 1 tbsp olive oil
  • 2 small onions, chopped


Season the chicken pieces with salt and pepper. Heat the oil in a heavy-based pan and once it reaches a high heat, add the pieces of chicken, turning them briskly to ensure the chicken is browned on all sides. Remove the chicken from the pan and leave to one side.

Add the onions, garlic and pepper to the pan and cook over a medium heat until the onions become soft and translucent.
