There is, in my view, nothing wrong with planning this rewarding, luxurious dish around an open bottle of leftover Riesling. Indeed a tired bottle of dry white wine could not limp towards a finer ending.
Use the best Parmesan that you can get hold of and grate it just before you mix it into the rice. This works brilliantly served as an accompaniment to fish and seafood dishes.
