A bitter sweet symphony, that’s almond and saffron. They work perfectly together as each of them skirts around both arrogantly acrid and rarefied floral notes. I love the foil of a thuddingly humble rice pudding foundation and the fairytale fluff of the meringue. This is such a quick pudding and will make you look rather clever for creating both Alhambran elegance and those darn tricksy soft peaks.
