Don’t be expecting a sticky toffee gravity to this dessert – this is an Indonesian steamed pudding. It is light and pale and is beautifully delicate. It seems in the heat and colour of the Indonesian sun, there is no aversion to such subtlety. The banana and coconut reach up out of the pale and pillowy in a soft caress. I add a caramelized honey sauce, more to the dish than the dessert.
