Fig anise-drizzled pistachio pancakes

The pistachio pancake concept is a very Turkish one. This dessert is elegant, light and the flavours put me in mind of pretty, bright restaurants with golden chandeliers and white tablecloths. Many recipes for these delicate lovelies add green food colouring just to drive the pistachio point right home. This is never something I would advocate – unless you are contributing to a comedy Turkish St Patrick’s Day dessert trolley.
