On paper, this seems crazy. I don’t think I’ve ever been accused of being an orthodox pizza traditionalist, but I try to keep pizza connected to its tradition of Mediterranean roots and my Sicilian-American heritage. That said, flatbreads have been cooked for thousands of years, and all over the eastern Mediterranean, there’s a dish called lahm bi ajeen, spiced meat on flatbread. When I was asked to do a lamb pizza in Toronto for General Assembly, I had this in mind.
