I used to teach a Sunday morning pizza class with Pete Litschi, my best friend and business partner, at The Brooklyn Kitchen in Williamsburg. Every class we’d go over O.G. pizzas and come up with a new one. It was a way to try ideas, pressure free. If the students loved one, we knew we were onto something. One of the things students always ask about is eggs on pizza, so we experimented a lot with eggs. This potato, egg, and Cheddar pizza was one of the winners.
