I’ve done fingerlings a bunch of ways on pizza. Roasted with olive oil and salt, smashed and fried, and boiled then thinly sliced. I recommend playing with those methods, and if there’s another way to use potatoes you come across or come up with that’s not in this book, try that too.

Ingredients

  • Handful of fingerling potatoes
  • Handful of sea salt

Method

  1. Put the potatoes in a large pot and cover with cold water. Season generously with salt and bring to a boil.
  2. Boil potatoes until fork tender, 10 to 20 minutes depending on the size.
