Fried eggplant cutlets are great on pizza. You could do a straightforward eggplant Parm pizza like the one, where you throw down the cutlets, place the sauce and mozzarella on them, bake it, top it with basil and Parmigiano-Reggiano, and call it a day. You could also bake these cutlets in the oven, layered like lasagna with mozzarella and tomato sauce and Parm and serve it with pasta or on its own with broccoli rabe and it would be amazing.
