Channel your inner nonna. You don’t want to get too fancy with these mushrooms. Chop the creminis into rustic bite-sized chunks. Discard the hard bottoms of the oyster mushrooms and cut those into strips. Be sure to roast them separately (they have different cooking times!), but you can toss both batches together at the end and adjust the seasoning.
