The base of this terrific all-purpose white sauce is ricotta cheese, which provides structure and flavor. It makes a great change from the classic tomato sauce. Select a whole-milk, smooth-textured ricotta for the best results.
In a small frying pan over medium-low heat, warm the olive oil. Add the onion and garlic and season with salt and pepper. Cook, stirring occasionally, until the onion is tender, about 4 minutes, taking care not to let the onion or garlic brown. Transfer the contents of the pan, including all of the oil, to a small bowl and let cool.
