The principle is not much different from that of mayonnaise.

Ingredients

  • 3 egg yolks
  • 150g almost melted butter
  • lemon juice
  • water

Method

Whisk the eggs with a splash of water and a slug of lemon juice in a bain-marie over just simmering water. Add the butter very gradually, indeed timidly. Never stop whisking.
