  • 2 egg yolks
  • 6 cloves garlic
  • 30cl olive oil


All ingredients must be at the same (room) temperature.

Make a paste of the yolk and the garlic. Add oil drop by drop, whisking vigorously. Eventually pour it in at a trickle but don’t get over-confident. Ultimately the consistency should be almost jelly-like.
