  • light stockpredominantly chicken
  • eggs
  • parmesan or pecorino romano

Method

Beat up 1 egg per person. Mix with grated cheese – I prefer Pecorino Romano – to make a light paste. Put a generous dollop of paste in each bowl. Pour on boiling stock.
