These tubers are neither artichokes nor connected to Jerusalem. They are a bore to peel. But their flavour is unlike anything else. An intern is once again useful.

Ingredients

  • jerusalem artichokes
  • light stock

Method

Steam the peeled and thinly sliced artichokes. Put them through a mouli then into a pan. Add stock. Cook at a simmer for half an hour.
