Do not try it if you are not confident about domestic deep-frying. My mother was overconfident: she had a certain expertise in setting light to kitchens.

A wok, an implement I seldom use, is handy. You will also need a slotted spoon and 2 large shallow wooden spoons.

Ingredients

  • eggs
  • peanut oil

Method

The oil must be hot. Put the wooden spoons in the oil to heat them so that the eggs don’t stick to them. Do eggs one at a time. Break an egg into a bowl. Slide the egg into the oil. Immediately begin to bathe the exposed side with bubbling oil and cover the yolk with albumen – come at it from both directions with the shallow spoons. Give it 20 seconds then turn the egg over.
