A wok, an implement I seldom use, is handy. You will also need a slotted spoon and 2 large shallow wooden spoons.
The oil must be hot. Put the wooden spoons in the oil to heat them so that the eggs don’t stick to them. Do eggs one at a time. Break an egg into a bowl. Slide the egg into the oil. Immediately begin to bathe the exposed side with bubbling oil and cover the yolk with albumen – come at it from both directions with the shallow spoons. Give it 20 seconds then turn the egg over.
