  • 4 eggs
  • 1 beaten egg
  • vinegar
  • flour
  • fine breadcrum

Method

Boil eggs for a bare 4 minutes in vinegary water (this makes removing the shell easier). Take them out and put them into cold water with ice cubes to stop them cooking. Peel off the shell. Roll the eggs in flour. Then in beaten egg. Then in breadcrumbs. Fry fairly gently in butter till the breadcrumbs are well coloured. Take great care when turning them.
