Skate with Brown Butter

  • 4 skate wings
  • 120g butter
  • 10cl vinegar


Poach skate wings in salted water for 6 or 7 minutes.

Meanwhile cook the butter till almost brown, then add sweet vinegar – Chardonnay or Pedro Ximenez – and capers. Bring this to a boil. Pour over the drained fish.
