This is essentially a layered pie/pirog. It is among the vernacular Russian dishes that were refined to gluttonous excess by French chefs at St Petersburg in the early 19th century. The French of course claim it as their own, though the Caucasian pastry is not otherwise part of the French repertoire and nor are kasha and vesiga, which you’ll be lucky to find – nonetheless, try.
