  • lamb hearts
  • spiced oil

Method

Slice hearts as close to wafer-thin as possible. Heat spiced oil till it’s smoking.

Put in the slices of heart. Cook for a minute. Turn them and cook for another minute.

Sprinkle lightly with vinegar.
