No cheese. Rowley Leigh used to include a piquant soft goat cheese at Kensington Place. It made for a truly delicious dish – but it wasn’t gratin dauphinois. Paul Bocuse includes Gruyère. Were they both wrong? Happily blessed with a certain obstinacy they’ll both deny it till the goats and cows come home.
