This is really a suspension of potatoes in butter and cream. Like the rest of the world I took this from Joël Robuchon though I have never read his recipe or tasted his (or his underlings’) version. So I guess I picked it up on le téléphone arabe.

Cut the potatoes into even-sized pieces, put in cold
