Courgette Beignets

  • 1 large courgette
  • 200g flour
  • 3 eggs


Grate the courgette and wring out much of the water. Add the grated cheese, diced garlic and shallot. Beat together the flour, eggs and olive oil. Add the courgette mix.

Heat sunflower oil in a pan. Fry the mix dessertspoonful by dessertspoonful, flattening so each beignet is 2cm deep max.
