This usually accompanies grilled squid or steamed octopus. It is perhaps better by itself.


  • 300g arborio rice
  • 3 onions
  • 6 cloves garlic


Sweat the finely diced onions and garlic in chilli oil.

Add the rice in the usual fashion. Ditto the stock. When it is close to being cooked, put the ink into a pan and dilute with simmering stock. Pour this into the risotto. Continue to cook. Add grated Pecorino just before it’s finished.
