  • 100g cold unsalted butter
  • 100g plain flour
  • piment d’espelette


Mix all the ingredients in a processor. Use the pulse in short spurts to combine them. They will form a dough without the need for liquid. Wrap in clingfilm and roll into a cylinder of 25mm diameter. Chill for an hour or so. Cut the cylinder into slices 8
