  • caraway seeds
  • vacherin
  • eau de vie/white wine/sake
  • olive oil


Leave the cheese in its box. Make some incisions on top. Pour in white wine or eau de vie or even sake. Cook for 35 minutes at 200°C. Exceptionally, do not peel the potatoes. Toss in olive oil and bake them in their skins. Slice them in half longways. Dip them in the fondant cheese. Sprinkle with the caraway seeds.

Cabri Ariegois is a goat milk’s analogue of Vacherin, rather less rich, rather more expensive.
