  • 2 pieces thick-sliced sourdough bread
  • Olive oil
  • Sea salt
  • 1

Method

Grilled Bread

Brush both sides of the bread with olive oil and sprinkle with sea salt. Toast until bread is lightly charred. In a bowl, mash the avocado with a fork, season with lemon juice and salt, and spread on the toast. Top with shaved radish, sliced kumquats, husk cherries, herbs, and a drizzle of olive oil.

Great breakfast combo! Loved the flavour balance: freshly harvested cumquats, radishes, lemon & basil from the garden may have helped that I guess. I'd certainly make it again! Thanks Matthew!

I had to Google Husk cherry. So in other parts of the world these are known as cape gooseberries. Thank you for this review, I’m always looking for now flavour combinations. It will be interesting to see how the cumquats work.
