In a saucepan, add shelled peas, a large pinch of salt, and enough water to barely cover. Cook over high heat for 2 minutes until the peas are tender. Strain off excess water. In a large sauté pan heat olive oil, add the peas and quickly toss to coat with oil. Check for seasoning, and add more salt if needed. Remove from pan.
