Red Wine Reduction

  • 4 cups red wine, such as Malbec or Pinot Noir
  • 12 sprigs thyme, tied with twine

Method

Red Wine Reduction

Place all ingredients in a saucepan and slowly bring to a simmer. Simmer for 30 minutes, then strain, reserving the wine and removing the thyme and spices. Return the wine to the saucepan and bring to a simmer over medium heat. Reduce the wine by half to 2 cups</
