Ingredients: 1 cup oat flour; 2½ cups almonds, ground into a fine flour; 2½ cups almonds, ground into a fine flour; 2 tablespoons flax seeds, ground; 1 cup hazelnut pulp; ¼ cup spiced pineapple; 1 cinnamon chocolate cake; ¼ coconut sorbet; 2 tablespoons spiced pineapple cream; 1 pinch of sea salt; ½ cup spiced pineapple juice; 1 cup cashews, soaked; 1 ripe pineapple, cut into 2-inch-diameter circles and 1-inch-diameter circles; ¼ teaspoon pink peppercorns, cracked; ½ teaspoon whole cloves; ½ teaspoon cardamom pods; 2 sticks cinnamon; 3 whole star anise; 1 teaspoon vanilla extract; 1 cup pineapple juice; ¼ cup coconut oil, melted; 1 pinch salt; Zest of 1 lime; 1 tablespoon lime juice; 2 cups water; ¼ cup agave; 1 cup cacao paste; 2 cups coconut meat; 1 tablespoon agave; 1 cup maple syrup

Method

Cinnamon Chocolate Cake

Place all the dry ingredients in a large mixing bowl. In a high-speed blender, place all the wet ingredients, except for the cacao paste, and blend until smooth. Add the liquid ingredients to the dry ingredients. Over warm water, melt the cacao paste in a double boiler, and add to the batter. Mix everything together by hand until jus
