Don’t let the long list here intimidate you, it’s mostly spices! After making every version of tofu scramble I’ve come across, this method, where the tofu is marinated, is by far my favorite! I suggest first pressing and marinating the tofu and then moving onto the roasted potatoes and sautéed veggies. You can serve this as a layered dish, as in the picture, or serve the scramble and potatoes separately.
