I take every opportunity to share plant-based meals and recipes, especially at big gatherings over the holidays. It’s always a conversation starter and inevitably leads to “wait, this is vegan? NO!” This cheese-inspired nut ball is my tried-and-tested version of a classic crowd-pleaser. It’s pretty much legendary! It’s important to soak the cashews and walnuts ahead of time to help with digestion and to make them easier to mold into a ball.
