This was inspired by traditional fried rice but includes some healthy twists—quinoa instead of rice, tofu instead of egg, and “fried” without oil. This recipe calls for black salt, or kala namak, for an egg-y aroma and taste. It’s not necessary but intensifies the flavor! Serve this on its own or with steamed broccoli.
