In the name of easy, nutrient-dense pasta you can make in less than thirty minutes, I give you my cheezy mac n’cheese! This recipe involves so many of my favorite things: pasta, hummus, one-pot meals. The cheezy sauce was inspired by hummus where chickpeas are blended into a creamy consistency. The Parmesan is optional but definitely adds a special touch.
