  • ¼ cup coarse salt (such as kosher salt)
  • 2 pounds napa cabbage, chopped into 2-inch pieces


  1. In a large mixing bowl, massage the salt into the cabbage until the cabbage becomes soft and wet. Cover with water.
  2. Nest a slightly smaller bowl inside the large bowl and add a weight, such as cans, bags of beans, or pickling weights, to weigh the inner bowl down over the cabbage and water so that it presses down into the cabbage. Let press at room temperature
