  • 3 ripe Hass avocados
  • ½ red onion, finely chopped
  • 1 stalk celery, finely chopped

Method

  1. In a large bowl or molcajete, mash together all ingredients except the lime wedge.
  2. Use immediately, or to store, transfer to an airtight container, packing the guacamole tight against the container walls to eliminate air gaps. Squeeze the lime wedge over the top, and press a layer of plastic wrap onto the surface to eliminate any air between the top of the guac
