Method
Cut the ends off the eggplants, so all ends are flat. Do not remove skin.
Halve each eggplant by cutting crosswise, using a straight line. Score an X on the flat ends of each piece of eggplant with the knife.
Gently score light rings around the sides of each eggplant, spacing the rings 1 inch apart. Be careful not to make the score cuts too close toge
