  • 5 ounces firm tofu in block form, drained
  • ¼ cup finely chopped parsley

  1. Place the tofu block between 2 salt blocks and let press for 10 minutes.
  2. Place the pressed tofu in a large mixing bowl, add all the remaining ingredients, and mash with a potato ricer. Break apart all the flat edges and mash until the desired texture is reached. Fluff with a fork.
  3. Store in an airtight container in the fridge. Keeps for up to 2 weeks.<
