Bright and refreshing, this summer soup is cool, sweet, and tangy. The watermelon balances out the traditional tomato, imparting a steady natural sweetness that plays against the garlic and red onion. Serve with a big spoon and enjoy the hydrating properties.


  • 3 cups chopped watermelon, plus 1 slice for garnishing
  • 1 large heirloom tomato<


  1. Combine all ingredients, except the garnishes in a food processor, and process until the desired thickness is reached.
  2. Transfer the mixture to a large serving bowl and chill in the fridge for 2 hours.
  3. Cut the reserved watermelon and lime peel into thin strips.
  4. Divide the gazpacho among soup bowls, and garnish each serving with the watermelon
