  • 3 cups chopped watermelon, plus 1 slice for garnishing

Method

  1. Combine all ingredients, except the garnishes in a food processor, and process until the desired thickness is reached.
  2. Transfer the mixture to a large serving bowl and chill in the fridge for 2 hours.
  3. Cut the reserved watermelon and lime peel into thin strips.
  4. Divide the gazpacho among soup bowls, and garnish each serving with the watermelon
